You know I love meat right? I mean seriously…I’m a carnivore and have no plans to look back. And yes I am well aware it’s not all that good for you but I have a secret…No one gets out alive. With that said making a great burger may not seem so difficult unless you have a palate that demands the best. Then you will love my gourmet burgers recipe. The toppings are your choice but making a delicious tasty juicy burger is what I crave and now you can master it too. While many think there is nothing better than a grilled burger I am totally the opposite. I feel the fat from the burger is imperative to my tasty gourmet burgers.

Ingredients
- 1 1/2 lbs ground chuck 80/20
- 2 tablespoons grape seed oil or canola oil
- 8 shallots peeled and sliced
- 4-6 hamburger buns
- Crumbled gorgonzola
- Sea salt and ground fresh pepper
Instructions
- 1. Form burgers to desired thickness about 6-oz each (thickness determines the cooking time)
- 2. Season both sides with salt and pepper
- 3. Using a cast iron skillet on medium high add 1 tablespoon oil, shallots, pinch of salt and sauté until golden brown transferring to a plate to hold
- 4. Using the same cast iron skillet add 1 tablespoon oil (if needed)
- 5. Add burgers and do not move for 3-minutes
- 6. Flip burgers adding desired amount of cheese cooking for 2-minutes then adding 1 teaspoon water under each burger by using a spatula to lift burger
- 7. Immediately cover with a lid for 1-minute then transfer to a wooden board (NOT a cold plate) allowing to rest for 8-minutes before serving
- 8. Place buns in skillet to brown about 30-seconds to 1-minute and transfer to serving plate
- 9. Remove skillet from stove adding shallots back to warm
- 10. Place burgers on buns topping with shallots and favorite condiments if desired and enjoy
