This dish was created because I was on a quest to find a salmon dish I really liked. I thought the dill, lemon and nuts would really create an interesting and fresh flavor! I was right! I always say, “If it’s as good on the plate as it is in my head, recipe will post soon!” And this was a true success. This fish is fast, easy to prepare and full of flavor!

It seems to be a popular dish on social media. I do hope you have a chance to make it and love it as much as we did!

Ingredients

  • 2 salmon fillets of similar size
  • 1 tablespoon mayonnaise
  • 2 teaspoons dill paste
  • 1 tablespoon olive oil
  • 1/2 cup pistachhios
  • 1/2 cup pine nuts
  • 1/2 cup Panko bread crumbs
  • Zest from one lemon
  • The juice from half the lemon
  • 4 slices of lemon for garnish
  • 2 springs Italian parsley for garnish

Instructions

  • 1. Preheat oven to 350*F
  • 2. Place the two salmon fillets, scale side down on a parchment lined cookie sheet. (I have the scales removed at the store, but you can keep them if you prefer)
  • 3. In a bowl, combine the dill paste and mayonnaise spread over the top of the fillets
  • 4. In a food processor or chopper, place the pistachios, pine nuts, bread crumbs, olive oil and lemon zest.
  • 5. pulse until combined and nuts are coarsely chopped.
  • 6. Place half the mixture on top of each fillet and pat down to cover top
  • 7. Next, lightly squeeze the lemon over the top
  • 8. Put in oven and bake for 15 to 20 minutes or until fish flakes easily with fork.
  • 9. garnish whil lemon slices and parsley sprigs and serve
