Little did I know that so many people love veggie burgers. Is it because it’s the beginning of the new year and so many people trying to start the year off healthy or are there that many people who love veggie burgers? Perhaps a combination of both. If you are a veggie burger lover then you must try this Veggie Burger with Quinoa, Black Beans and Chipotle Peppers in Adobe Sauce recipe. I got this veggie burger recipe from a friend but twisted it to make it a bit more on the spicy side. If you do not like things hot eliminate the chipotle peppers in adobo sauce or use less. It really adds a great flavor but is a little hot. I love hot food so for me it’s perfect.

Ingredients

  • 1/2 cup quinoa
  • 1 cup black beans
  • 1/4 cup frozen corn
  • 2 Chipotle peppers in adobo sauce minced
  • 1 cup rolled oats ground fine
  • 1/4 cup chopped cilantro
  • 1 egg beaten
  • 1/2 teaspoon cumin
  • 1/4 cup chopped red onion
  • 4 cloves garlic minced
  • 2 cups vegetable stock
  • 2 tablespoons olive oil
  • Chipolte Remoulade:
  • 2 Chipotle peppers in adobo sauce
  • 4 tablespoons mayonnaise
  • 3 tablespoons corn
  • 1 tablespoon cilantro chopped
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Old Bay
  • 2 cloves garlic
  • 1 tomato chopped
  • 3 tablespoons sweet onion chopped

Instructions

  • 1. In a pot add vegetable broth and quinoa cooking for 13-15 minutes, remove from stove and allow to cool.
  • 2. In a small pan over medium high heat add onion, garlic, pinch of salt and saute for 5-minutes.
  • 3. Pour black beans into a colander rinse well and drain.
  • 4. In this process only add a little Chipotle until you have desired flavor, Chipotle peppers in adobo sauce is hot.
  • 5. In a large glass bowl add 2/3 of black beans and using a fork mash well.
  • 6. Combine Quinoa, Chipotle peppers with adobo sauce (a little at a time), cilantro, cumin, pinch of salt and pepper and fold together well.
  • 7. Taste to see if you wish to add all the Chipotle peppers in adobo sauce before you add the egg.
  • 8. Add beaten egg and fold well. Add remaining black beans, corn, ground oats and fold well until oats are absorbed.
  • 9. Using a cookie sheet spray with non stick cooking spray.
  • 10. Form veggie burgers and place on cookie sheet. Cover and refrigerate at least 2-hours.
  • 11. f you have a pizza stone place parchment baking paper on stone.
  • 12. Preheat oven to 400 degrees and bake for 10-minutes on each side.
  • 13. If you do not have a pizza stone bake on cookie sheet for 12-minutes on each side.
  • 14. Chipotle Remoulade: To make the Chipotle remoulade use a Cuisinart or blender.
  • 15. Add mayonnaise, Chipotle peppers in adobo sauce, red wine vinegar, garlic, Old Bay and puree.
  • 16. Place in a small glass bowl adding onion, corn, cilantro and tomato and fold.
